Avocado Salad
The ingredients for
this vegetarian meal are:
4 ripe avocados
Cherry tomatoes
A bunch of spring
onions
Cloves garlic
2 table spoons of
lemon juice
2 tbs white
vinegar
Mustard
Fresh parsley
A tbs olive oil
Salad leaves

Chop the
cherry tomatoes into halves. Crush the garlic into a bowl after peeling.
Wash and chop the spring onions. Cut up the avocados into halves as
well. After removing the inside seed, peel off the skin, chop up the
flesh and then pour lemon juice over them to ensure that the avocados do
not discolor.

Add a
little oil onto a pan and let it heat up a little. Add the spring onions
and the garlic and let it cook for about three minutes until they are
softened. After this is done, add the vinegar, mustard and tomatoes.
Stir fry in high heat until the tomatoes are well done. Remove from the
heat, and then stir in the avocados and the parsley. This simple
vegetarian recipe is best when it is served hot.

Artichoke soup
The ingredients for
this simple vegetarian recipe are:
6 artichokes
Vegetable stock
3 cloves garlic
1 peeled potato
Butter
Salt and pepper to
taste

recipe is very easy to make and does not a lot of time or energy to
prepare. Heat the butter in a sauce pan and lightly sauté the artichokes
and the garlic. Ensure that you are always stirring gently so that it
does not stick to the pan. Sauté until the artichoke turns golden. At
this point, add the potato and the vegetable stock and bring the mixture
to boil. Use low heat while you are cooking and simmer the mixture for
about 10 minutes or until all the vegetables are tender.
When the vegetables
are tender, the potatoes and the artichoke are then blended with a
little bit of cooking liquid. Transfer the puree back into pan, add salt
and pepper and add any remaining liquid that you may have. Reheat the

and immediately when it leaves the sauce pan.

2 tomatoes (diced)
500g of tofu –
slice very thinly
2 zucchinis –
diced into quarter lengths
2 table spoons of
olive oil
3 table spoons of
soy sauce

Heat the pan slightly
and then add the oil followed by the tofu. Let the tofu cook for a
minute or two and add salt and pepper to taste. Turn the tofu to the
other side and let it cook as well. When it is cooked, add the zucchini
and the tomatoes and cook for a few minutes. Add the sauce and then
serve hot after a few minutes of additional cooking. This simple

Italian tomato pasta salad
This simple vegetarian
recipe gives a much needed Italian touch to your vegetarian meal.
Ingredients:
1 (8 ounce) pasta
½ a cup of Italian
dressing
2 finely chopped
tomatoes
¼ cup of grated
Parmesan cheese
Put slightly salted
water in a pan and bring to boil, add the pasta and let it cook for
about 5 minutes or until its tender. Drain the pasta and then place it
in a suitable bowl. Add in the Italian dressing and tomatoes and toss
about. Sprinkle the Parmesan cheese at the top. This simple vegetarian
recipe only takes 5 minutes to prepare and is best served hot.

All spice string beans
Ingredients:
1 tbs of vegetable
oil
2 gloves of garlic
1 pound of fresh
green beans – snapped and trimmed
½ cup of water
2 teaspoons of
ground all spice

Method
To cook this simple
vegetarian recipe, heat oil in a pan and cook the garlic till they
brown. Add the green beans and the water and bring to boil. Add the
salt, pepper and allspice then cover and simmer for about 20 minutes.

prepare if you boil the beans before hand.
